Ingredients for 4 people:

tagliatelle porcini
  • 4 whole eggs
  • 450 grs flour
  • 40 grs sugar
  • 2 tbsps olive oil
  • 1/2 glass vinsanto
  • 1/2 glass sambuca
  • grated peel of 1 lemon
  • grated peel of 1 orange
  • juice of 1 orange
  • 3 tbsps vanilla
  • 2 packets baking powder
  • icing sugar


Whisk eggs with sugar in a bowl and add all the other ingredients except flour and baking powder. Pour flour on a pastry board making a well in the center and add mixture bringing in some flour from the outer perimeter while whisking. Add baking powder and knead until dough is homogeneous and medium thick.

Cut dough in 3 cm diameter streaks, then cut into small pieces and deep fry in boiling oil. Once well browned outside and cooked inside (use a toothpick to see the cooking level), let drain strufoli on a kitchen roll and sprinkle with icing sugar.
