Eggs with tomato sauce

Ingredients for 4 people:

Uova con pomodoro
  • 8 eggs
  • 15 San Marzano tomatoes
  • salt
  • pepper
  • olive oil


Rinse an cut tomatoes into pieces and cook in a frying pan with hot olive oil, adding salt to your taste. After 15-20 minutes add eggs, trying to space them out one another. Slowly stir with a wooden spoon to mix eggs and tomatoes during cooking. Cook eggs to your taste and sprinkle with ground black pepper. Place eggs on plates and serve with fresh bread.
