Char-grilled chicken
Ingredients for 4 people:
- 1 medium-sized chicken
- juice of 2 lemons
- 3 cloves of garlic
- 6 sage leaves
- salt
- pepper
- olive oil
Preparation:
Gut, rinse, split (without dividing it) and squeeze the chicken. Finely chop garlic and sage with salt and pepper and season chicken inside and outside. Make holes with a sharp knife on legs and breast and stuff with seasoning. Dress everything with lemon, oil, salt and pepper and let rest for 3 or 4 hours in a bowl.
Char-grill but do not place chicken too close to the charcoal fire. Pour on the remained seasoning and turn round a few times for about 1 hour and 40 minutes. Use poultry shears to cut into pieces and serve hot.
