Char-grilled chicken

Ingredients for 4 people:

Pollo in gratella
  • 1 medium-sized chicken
  • juice of 2 lemons
  • 3 cloves of garlic
  • 6 sage leaves
  • salt
  • pepper
  • olive oil


Pollo in gratella Gut, rinse, split (without dividing it) and squeeze the chicken. Finely chop garlic and sage with salt and pepper and season chicken inside and outside. Make holes with a sharp knife on legs and breast and stuff with seasoning. Dress everything with lemon, oil, salt and pepper and let rest for 3 or 4 hours in a bowl.

Char-grill but do not place chicken too close to the charcoal fire. Pour on the remained seasoning and turn round a few times for about 1 hour and 40 minutes. Use poultry shears to cut into pieces and serve hot.
