Cook rice in milk and, if necessary, a little water,
and sugar. The morning after, place 100 gr. butter and
1 dl. water over moderate heat. Bring water to a boil
and add 100 gr. flour. Stir vigorously and remove from
flame.
Once the mixture is well cooled, mix in 3 whole eggs,
add 1 abundant Tbsp. vanilla, grated orange peel and
stir until blended. Deep-fry in boiling oil and sprinkle
with vanilla.
